Hi I’ve got into making kit wines over the last twelve months as well as beer and currently got 15 gallons at various stages of ageing in demijohns. I want to add some oak chips to a few jars to mix it up a bit and see what results I can get. All have been racked 4 times and sediment free, just bulk ageing. What’s people experience on the best way to add oak, how much and for how long please? They're premium kits fermented on oak chips initially as well. Cheers
