Adding sugar

Can anyone advise how you know whether your wine needs sugar prior to bottling, and how much to add? Tried brewing wine once many years ago and cocked it right up by over doing the sugar bit at the end.

You only need to add sugar at the end if you need to sweeten the wine or make sparkling wine.
