I am tempted to have a go at brewing something like Proper Job by St Austell? Only trouble is there is no recipe in Graham Wheeler book. On the side of the bottle it says hops used are Williamette, Chinook and Cascade. Would anyone like to hazard a guess of exact quantities, times etc?

It’s unusually malty for an IPA with all the lovely hoppiness sitting on top. Perhaps someone should try a simplified recipe with only two hops i.e. Chinook and Cascade?
Any ideas for a recipe?

Misc Bill
----------------

Single step Infusion at 66°C for 90 Minutes.
Fermented at 20°C with Safale US-05

This should be a pretty good approximation of it. Mine usually turns out at 7.5% because of initially the increased efficiency I got.

I also usually use 5% wheat malt and 5% rolled oats as this adds a little sweetness. I never try and do exact clones of something I always make southern beers northern   and add my own twist.

The hoping should be pretty much the same as what you would get in Proper Job.

Hope that helps :thumb:

BrewUK do a recipe pack for Proper Job, and it's very close - I was able to sample the real thing next to mine back in the summer :D "This is an extract recipe version of the winning beer in our Proper Job Challenge 2012 as judged by St Austell head brewer and creator of Proper Job Roger Ryman."
http://www.brewuk.co.uk/store/beerkits/ ... r-job.html

They've been a bit coy with the recipe, just listing "hop packs" rather than the actual hops (although their website does say Cascade, Chinook and Willamette hops), but there are 4 of them going in at various points (start, 30mins, 45mins, at end for steeping).
