I always leave for the time suggested and then cool. You'll get better flavour extraction in warm wort than cold.

For best results, many recommend cooling to 80C first, then adding the aroma hops, holding at 80C for 30 mins, then finishing off the cooling.

I didn't know this....

But, would that mean any earlier hop additions would keep on increasing the IBU?
 
I think the alpha acid isomerisation (bitterness) pretty much stops below about 90C so there shouldn't be any meaningful increase in bitterness.
