HI FOLKS A COUPLE OF QUESTIONS 1 IN A RECIPY IT SAY,S EX AMOUNT OF HOPS AT TURN OFF,SO I AM GUESSING YOU STOP THE BOIL AND ADD THE HOPS....HOW LONG DO YOU NOW LEAVE THEM IN THE LIQURE ???? MANY THANKS.
 
Turn off/knock off/flame out usually signifies at the point when the heat is turned off and the method of cooling the wort is started, so the hops are left in the wort as it cools.

To muddy the water, often brewers will delay the cooling process and leave the hops sitting in hot (not boiling) wort for a period of time. This is usually described in recipes as a Steep or Whirlpool and be listed with the number of minutes duration.

If steeping, which I do, turn off heat, chill to just under 80c (which takes only 2-3 minutes with copper coil chiller) then add your flameout hops and leave for 30 mins before chilling to pitching temperature.

At under 80c you get a great hop addition but no bitterness is added.
