Just been catching up with my podcasts on the way to work. Been Listening to a couple of interesting episodes from Radio 4's The Food Programme. - Fermenting: general discussion about the role of fermentation in food production, includes some details of Sake production. - American Craft Brewing Scene: interesting report on how brewing has developed in the USA. Not finished this one yet but worth listening. Haven't found the website yet to see whether these programmes are still available - I have the MP3s of course if anyone is interested.
