My cider seems to be coming to the end of the fermentation. Yesterday it was 1.011 and very little bubbling was visible this morning. However, I made a mistake with my initial equipment order and won’t get my syphon until Monday. Is it okay to leave it in the bucket for a couple of days or should I transfer it to the pressure keg immediately? I could try to rack it with the help of a funnel if need be (although I was discouraged from doing that in principle).

I thought if I leave it in the bucket for too long the remainder of the yeast might die off and I won’t have any secondary fermentation. Of course, as a total beginner I might equally be totally wrong.

Any advice will be much appreciated, thank you.
