I've been struggling to find a Citra recipe to suit my needs, so I've tried to come up with my own. I want something pale as possible, not too strong, and all-grain.

Could anyone look over this recipe for me please?

I'd replace the brown sugar for 400g of wheat malt (dry, pale, light), drop the 35m addition of Northern Brewer to 15g at 30m, and add another 25g of Citra as a 5m addition. Citra works great as a late addition but I find that if boiled for long it seems to need some time to mellow down, so using NB as a bittering hop makes sense.

Thanks for the input. I will enter that into the software soon.... I have plenty of time to think before I brew....

Another idea I had was using the following EPA recipe (which I found on jimsbeerkit.co.uk), , and substituting some of the other hops with Citra....

As it happens, I already have some of this EPA recipe fermenting, so I can see how the original turns out.


SEYMOUR MARSTON'S EPA CLONE

6 US gallons = 5 Imperial Gallons = 22.7 Litres

GRAINBILL:
100% = 7.8 lb = 3.54 kg, English Pale or English Lager Malt, or a blend thereof, the fresher and crisper the better

MASH at 151°F/66°C for 90 minutes

BOIL 60-90 minutes, add a pinch of gypsum to make the hops pop, drop Irish Moss at 15 min remaining.

HOPS:
.88oz = 25 g, Stryian Goldings, 60 minutes
.88oz = 25 g, Cascade, 15 minutes

YEAST:
White Labs WLP026, derived of the historic Marston's strain

STATS (assuming 75% mash efficiency and 77% yeast attenuation):
OG: 1038
FG: 1010
ABV: 3.6%
IBU: 26
COLOUR: 3°SRM/6°EBC

Assuming I went with this, it would look like the following. (I believe you meant only add Citra at 5mins and not before?).

I may even brew both the EPA idea and this one;

I believe he meant add another addition of Citra, not move what you already have, per below:

Northern Brewer 20g 60mins
Northern Brewer 15g 30mins

Oh, sorry, I wouldn't boil Citra too long... if you do

10m - 25g Citra
5m - 25g Citra
dry hop - 25g Citra

... you'll end up with plenty of it! You could replace the 10m addition for a half an hour steep before cooling the wort. It's a very nice hop but I think it can end up a bit 'bleachy' and harsh if you boil it too long. Late additions add plenty of that mango flavour.

I really like Citra, but I'm not yet experienced at customising recipes. Now I can have a good go at this...

I will update how it goes.

Note; The final 1min Citra is 20 min steep after flameout
The dry hop Citra is hop tea, added to bottling bucket.
 
Oh, and this is extract, as I won't be ordering grain just yet.

Hopefully I can try out another hop configuration.
 
I tried Oakham Ales Citra and found it to be "The best bottled beer I've ever tasted!!!". An ale drinking friend of mine recently confirmed my view. I've done a few brews using various combinations of citra and other hops. If you want to do 15 litres of AG this is what I'd do...........

3kg Maris Otter
250g wheat malt (for the head)
Crushed crystal to taste. 250g would suit me.
Mash at 66C or 68 if you like it a bit sweeter.

Hops

Northern Brewer 15 to 20g for 60 mins
Citra 20g for 15 minutes at which time I also add Irish moss.
Citra at flameout when temp has fallen to 90C 30 to 40g ( I like 40g!)
Dry hop with 20 or so grammes of citra at 10 days.
Leave to ferment for about 14 days, usually.
Nottingham yeast. I buy Gervin GV12 for £1.25. I'm told it is nottingham but at a very good price!

I start with 20 l of water and with BIAB end up with 15l @ 1047 ish.

I'll drink a bottle which I made about 6 weeks ago to remind me of how good it is! I may be gone some time...............
 
Sounds good... I will prob give that one a go, when I've used up all my extract and moved to all-grain on a full time basis.
 
Well, a lot of Citra sounds good.....

I actually only have 50g left right now, for this brew.

But will prob order in bulk next time :-)
 
Just a note , i see you had some pale ale grain in your recipe for extract (partial extract) brew . You won't get any strength from your grains only colour and a little flavouring so base malts like pale ale are no good to you , you only want to use speciality malts like crystal etc , hope it goes well for you , enjoy . :cheers:

A new ale house has recently opened up round here and they had Oakham Citra on hand pump: one of the best ales I've ever tasted (and I've tried a lot!).

I'm really keen to brew something like this, I've got BrewUK's single-hop Citra recipe pack ready to go on, once this weather cools down, but am really interested in how the recipes on here turn out.

The only reason I added the 200g ale malt was because I had it surplus and wanted rid of it.

Infact, the only reason I done this with extract was to use up the surplus extract also.

I'm gonna move over to all-grain from now on - So next time I make an ingredients order, I will order accordingly, including lots of hops. Hence much deliberation about what to use....
 
Well, just cracked open the first bottle of the Citra-Cascade....

It's a nice drinkable brew, and damn hoppy as you'd imagine. Slight downside is that the Cascade is so prominent that it overpowers the Citra... Nice all the same!

Anyway, that's all them spare ingredients used up, and time to go back to basics.....

I'm going over to all grain for everything now, and I'm gonna use something along the lines of the hop configuration mentioned above (i.e. no Cascade).
