I have a table somewhere I will post it up about the temperature a certain ABV beer freezes at I think a 4%ABV freezes at -2.3 C but you have to have confidence in your equipment that you are getting a set temperature. Safer to set -1 C for lower ABV and -2 C for higher ABV takes 24 to 48 hours sitting in a cold shed it will drop clear, just take longer.

Its fascinating to watch you can see the line of clear wine falling down the demijohn.

At this time of year your garage should do nicely.
