I've found this Saison recipe at Belgian Saison in the Style of Saison Dupont Recipe

I wanted to check about the late addition hops - the AA of the hops that they use are just 1.5 and mine are some 6% AA. Am I right to think that AA makes less difference to late additions??

MALT/GRAIN BILL
11 lb (4.9 kg) Pilsner malt
0.5 lb (227 g) Vienna malt
0.25 lb (113 g) Munich malt
0.5 lb (227 g) Caramunich malt
0.5 lb (227 g) wheat malt

HOPS SCHEDULE
1 oz (28 g) East Kent Goldings pellets [6.3% AAU] at 60 minutes
0.5 oz (14 g) Styrian Goldings pellets [1.5% AAU] at 5 minutes

YEAST
Wyeast 3724 Belgian Saison or White Labs WLP565

Oh and any other comments would be appreciated. I was thinking of adding some Grains of Paradise and Lemon rind, might that be a good idea?

For the hops, you should calculate the amount needed for the 60 minutes bittering charge from the IBU from the original recipe. It's definitely true that the second charge will not influence the IBU very much.
