Has anyone made Damson wine with the stones still in during initial ferment?
I have made 3 previous batches and always de stoned before primary ferment and they have all been good.
I was in a rush last Autumn so just froze a load with the stones in,I defrosted them and got them under way last week,they have just gone into Dj`s this eve.
I make Sloe wine most years and they are very closely related and for obvious reasons you don`t de stone those and it always comes clear,so I thought I would try the same with this years Damson. I use Pectolase of course.
New to this forum,but been making country wine for a long time.

I made some Damson wine once. With the stones in the primary fermenter. Mainly because destoning them is a total waste of time in that context lol.

I recall it being quite nice.

One time I made a pie, chicken and ham, with a bit of the wine in the sauce.

The sauce came out bright pink. It was rather disturbing lol. Damn tasty mind.

Tell you what though down here (Surrey) Damsons are solid gold. If you find anyone selling damsons here you bloody well buy a **** load and throw them in your freezer lol.

So in summary:

Don’t worry about it they’ll be fine. Lol

Also

Stop wasting time destoning the buggers.
 
Cherry stones and apple pips contain cyanide,Dont know about damson.
As far as i know its only a problem when the pips are crushed.

Lol agreed re the destoning.If this finishes clear I wont be doing that again!

Yh aware of that,I think it shouldn`t be an issue otherwise Jam makers would be killing people on a regular basis ;)
