hi all,
Used this recipe last year but it was quite dry, any ideas how I can make it sweeter and not as sharp?

Last years recipe
20 elderflower heads
900g sugar
150ml white grape juice concentrate
3 lemons, washed
Champagne yeast
Yeast nutrient
4.5 litres water
 
Add artificial sweetner. Make up a syrup that you add to the glass before you pour it - don't use sugar because it'll make it fizz up. There's that thing where you let it carbonate for a few days then pasteurise the bottles to kill the yeast which leaves some sugar behind. It's a scary business.
 
You could try a lower alcohol yeast with more flavour. The higher alcohol tolerant yeasts will ferment dry up to their limit from what I've learned.
Also try cutting back on the lemons.
 
Ive done mine this year using this and it tastes great:

30 heads Elderflowers.
2kg Sugar
Zest & Juice of 5 lemons
100ml White Grape Con (Wilko)
Water to 3 gallons
Champagne Yeast & Nutrient
