I'm about to buy a conical steel fermenting vessel. It's to replace my plastic buckets! But I'm toying with the idea of buying one that is twice the capacity of a 'normal' plastic bucket 23 litre brew. So here's the question:
If I only brew 23 litres in a 50 ISH litre FV does the extra ullage have a negative effect?
Thanks in advance!

If I tried that the negative effect would be that it wouldn't fit in my fermenting fridge.

A very good point, although I do t have a ferm fridge, just a freezing cold house. But that's not to say a never will!
