First time from fruit which yeast?

Hi,

Having recently restarted winemaking uring pandemic I've only previously used kits and have 9 from juices fermentation.

I decided to take advantage of recent NHS discount at food warehouse and bought 4.5 kilos of blackberries and a 1.5 kilos of blueberries.

A friend advised 1.5 kilo of fruit to 1.2 kilo of sugar per gallon as a basic recipe.

Have a couple of questions, should I use teabags to add tannin which have seen recommended in juice recipes and what yeast would u recommend from the following ?

Its defrosting now so will be brewing in the morning

The Young’s one, can’t go wrong. Young’s have never let me down so far.

Except when they stopped the definitive wine kit range, which I’m still hacked off about....!
