Good morning everyone

I’m returning to home brewing after a 12 year and 2 child break. They are both old enough now to lift and cut fruit for me so it’s become a family hobby.

2 days ago I started my first peach wine as the wife brought home some peaches and my mind started to wander.

Currently there is 6kg peach. 4kg sugar and 22l water beginning to start its primary fermentation.

I’m shocked at how well my yeast starter worked. I expected to wait between 8-24 hours for initial fermentation, but after sterilising orange juice. Leaving it to cool and adding 2tbsp sugar, yeast nutrient and a dried active yeast, 7 hours in it had started.

Hopefully this isn’t a bad sign and when I put into secondary fermentation vessel after straining out the fruit, all still goes well or I may have to theoretically turn it into peach brandy. Theoretically of course.
