Forgotten wine recipe , have old ingredients list

I've got one of those stick on thermometers on the side

Seems to be showing 32 , waiting for it to drop to 30

I have a heater on the bucket set to 26
 
Is there a temperature range for the stopper and finings to work ,or will any temperature do ?
 
All looks good with the ferment

Couple of things I'm not sure about

All the equipment I have at the moment is 25 litre drums

Plan at the moment is to add the stopper , then finings and transfer wine (off the yeast) to second drum

Should I add the campden with the stopper or when transferring to 2nd drum ?

Also , will the wine spoil in the 2nd drum ?

I've no other vessels ATM

I've got sanitised milk cartons which i could fill to top and put in the fridge, would that be better than leaving in the drum ?

Ok I'll do the above steps plus add the campden with the stopper


Then i'm going to Syphon into 5 5 litre water bottles and refrigerate

Will I need to sanitise the water bottles after tipping out the water , I would hardly need to would I ?


They'll be the full bottles of drinking water u buy in the shops
 
How long would it be safe in the second vessel after the campden/stopper,/,finings is done

Does it have to be transferred then to bottles immediately

Is there a risk of contamination if not
 
What will be your second vessel - a demijohn with airlock? If so it will keep in there for as long as you want it to. You'll need to leave it in there for a wee while to let it clear down anyway. Once it's clear, it will be fine to bottle (coz you've added fermentation stopper)

Probably transfer to second 25l drum and then to 5l water bottles

I don't have much equipment atm
