How long to ferment?

I don't want demijohns all over the place and I may even do larger volumes of I find something I like enough so I'll be fermenting in my temperature controlled brewing fridge.

Brewing/frementing beer takes about 14 days then adding couple of days to cold crash that might be as long as 20 days in all before the fridge is empty.

How long would my fridge be occupied with a wine fermentation?

What can I do to reduce that time, change recipe, use more yeast....?

Oh and is Star San ok for the equipment?

My wines take about 12 - 14 days to ferment but I ferment at the lower end of the yeast's temp range. If you want to speed things up ferment at the top end of your yeasts range, possibly even slightly over when you first pitch. Use a good amount of nutrient, double the amount of yeast pitched and make sure the must is well oxygenated to start.

Sanitation is the same for wine equipment as it is for beer.

My fastest fermentation was 8 days and two days clearing this was a Solomon Grundy kit when i first started.

What can I do to reduce that time, change recipe, use more yeast....?

If you are using temperature control as far as i know there is nothing you can do to make it faster

Oh and is Star San ok for the equipment?

If its OK for beer it'll be OK for wine/cider.
