Hydrating dry yeast

Hi guys, why do we rehydrate dry yeast ? I've been doing it since I started but the packets always say just top sprinkle over the top. Is dehydrating a much butter process than just following the manufacturer instructions ?

Yup just like humans its better to re-hydrate with water rather than must or wort.
Only thing is once the yeast is re-hydrated you are committed to using it asap.

That's a good read about why hydration is good. And getting the temperate right, about 35c helps.
