Hiya,

An unexpected free morning has left me pondering an ipa recipe using t-58, this leaves a peppery spicy flavour.

Do you think pale malt and a bit carapils would be alright?

Planning to bitter with magnum

Late Hops wise I have centennial, columbus, amarillo, simcoe, Nelson sachin, tomahawk, apollo and a tiny bit of cascade.

Or I could go noble hop and go far saaz and halertau?

What do you reckon?

If you've not used it before, T-58 is pretty mild, particularly if you ferment it on the cool side it would pass for a British yeast. So you could go the bitter route, or go the more dank West Coast IPA route.

Also it sets off like a rocket!
