Hey all! I'm very new to brewing, so thought I'd share my first brew from my own recipe. I've gone for a New England IPA style beer and quite influenced by Brewdog's Hazy Jane:

Mash: 25-Minutes
Boil: 60-Minutes

OG: 1.061
Estimated FG: 1.012
Est. ABV: 6.4%

Batch Size: 10 Litres

Fermentables (2.77 kg)

2.515 kg - Clear Choice Malt ® Extra Pale 3.7...

251 g - Oats, Flaked 2 EBC (9.1%)

Hops (135 g)

Hop Stand

0 min 100 °C - 10 g - Amarillo - 9.2%

0 min 100 °C - 10 g - Chinook - 11.6%

0 min 100 °C - 10 g - Mosaic - 13%

Dry Hops

Day 3 - 35 g - Amarillo - 9.2%

Day 3 - 35 g - Chinook - 12.1%

Day 3 - 35 g - Mosaic - 12.25%

Yeast

0.6 pkg - Fermentis Safale American US-05

As I'm still pending my Peco Boiler from THBC due to Brexit related shenanigans, I decided to do it using the 11L and 8L stockpots I used in the kit brew. I added the mash volume to the 11L pot, brought to mash temperature and then added my fermentables to the bag and mashed in. In the meantime, I heated up about 7.5 litres in my other stockpot for use in the sparge and for top up during the boil. I used the Ikea sieve to sit on top of the 11L pot and sparge/drain into until I had full boil volume and removed the sieve/bag. I then topped up the water throughout the boil. It came out well - I used some porridge oats instead of flaked oats and I can tell it added the haziness to the beer. I used my refractometer and the OG came out as 1.057 - about four points off.

My only concern is it's been nearly 15-hours and there's little activity in the airlock - I can see there's some krausen forming, but it's not as active as I'd expected in comparison to the Punk IPA kit brew. Have I underpitched? I'm beginning to think I should have put the whole packet of yeast in and I should have investigated that a bit more before the brew day.

not too late to add more yeast if you're worried.
one of the reasons i don't do AG. i'd have to clean my cooker to document it.

We're good! The airlock is going like a madman now and I'm going to take a reading tomorrow night when I add the dry hops. I'm hoping we can have fermentation mostly wrapped up by Saturday with it being a NEIPA - let's see!
 
So, I just quickly added the dry hops and took a refractometer reading. It's already at FG and there was little to no krausen on top. I think we're on track to bottle on Saturday as planned.

I dunno what's in US-05, but clearly it's good stuff!
 
An update on the NEIPA! I think my quick turnaround time has worked well. I bottled it Friday night and I tried some tonight with my partner (she absolutely loves NEIPA's) and she loves it. A little under carbonated here, but in a few days time I think it'll be perfect!

So... I didn't do a very good job at keeping this updated throughout the year. As a general update, I've done around 20 brews - all to varying degrees of success! I'm still working out the process perfectly, but it's been fun learning about water chemistry, yeast, beer styles etc.

I brewed a Black IPA yesterday. Some pics and recipe below!
