I put this together over the weekend for my next stovetop venture. Its a La Fin Du Monde Belgian Tripel clone. Im not great at picking steeping hops. Any thoughts or guidance there? Any comments welcome :)

The idea would be to bottle condition in 500ml capped bottles (would these survive the bottle fermentation?)

If you carbonate this to the pressure the style requires you're risking some bottle failures - you need the stubby Duvel-style bottles or champagne bottles to be on the safe side.

That is not a high carb beer from what i remember. Only the 750ml bottles come with corks. Sorry i cant advise on the recipe, i used to drink quite a lot of it but was a long time ago. A really nice beer although i preferred the troi pistoles. Never seen any in the UK.
