Leaving out chemicals in wine kits

I make Kenridge kits and we tend to polish the lot off in a month, I can never make enough to age it!
Recently I've realised that I have a few food intolerances, and one of those seems to be sulfites. I have a reaction from anything containing them, from fruit squash to preserved meat, to......wine.
Would it have any effect on the wine if I just left it out?

Ive just done a cal connoisseur merlot and have decided to leave the sulphites and sorbate out,I never put any in the wow's I've made and they have been fine so hopefully the kit will be the same.
 
I dont notice they affect me directly but my wife does have a slight reaction sometimes but not really sure what causes it ,also not sure if the sulphites contribute to a hangover(although that could be down to excessive consumption!)
 
I too have not used sulphites in my wine.I do use them when cleaning my eqipment.

Just be extra carefull to make sure everything is clean.
