Low carb wine

Hi. I’ve seen they are selling a 0 carb and a 0 sugar wine. I was wandering if there was a way to brew this at home. I’ve scoured the Internet but not found anything. The wine they are selling is called slim wine

I messaged the company who make the slim wines and this was their reply.
Hi Deb, we use champagne grapes with the location that they are grown as well as a special fermentation process using a secret yeast! This process lets us remove the sugar and maintain the alcohol content!
Has anyone any ideas on the yeast they would be using

Any progress? I want to know too. Looking for keto friendly wine or at least to minimise set backs.
At a tenner bottle I'd prefer to try and brew myself
