I'm going to give this a bash:

I tried the Strawberry & Lime one a while back and it came out OK, but there wasn't much strawberry taste.

Is there a way I can add peach/passion fruit flavouring to this? If so, what type, and how much should I add?
 
All of it. Avoid things with preservatives, like sulfites or potassium sorbate.

So if I wanted to add Peach and Passion Fruit, should I add a full 1KG of each (to the 20L) or add 0.5KG of each?

Personally, I would, based on the fact that a buddy did a Mango NEIPA with 1.7kg of mango puree and it ended up with a distinct but far from overpowering mango flavour. Will be good if you can cold crash it and help compact the pulp when its finished.
 
As you like, but some of the aroma might get lost if you put it in right at the start. I'd wait 2-5 days until the main fermentation is well and truely under way and perhaps slowing a bit before adding it.
