Made my first AG brew in about 15 years today. Bought my ingredients from crossmyloof. Used Simcoe in place of Pacific Jade, similar alpha acid. Everything went hunky dory, pitched yeast at about 27 degrees, a bit high I know, but stuck it in the cellar so hopefully ok. At the top of the celler temp hangs about 19 degrees.
God, forgot how good it feels to make ale!

Made up to 20ltr OG 1.065

Batch size: 5 gallons (19 liters)
Brewhouse efficiency: 70%
OG: 1.070
FG: 1.016
IBUs: 60.5
ABV: 7.0%


MALT/GRAIN BILL
8.5 lb (3.85 kg) U.K. pale, 2-row
3 lb (1.36 kg) U.K. pale, Maris Otter
1.25 lb ( 567 g) white wheat malt
8 oz (227 g) caramel/crystal 60L


HOPS & Additions SCHEDULE
1 oz (28 g) Cascade [5.5% AA] at FWH 0.5 oz (14 g) Pacific Gem or Pacific Jade [15% AA] at 50 minutes
0.5 oz (14 g) Cascade [5.5% AA] at 30 minutes
0.5 oz (14 g) Cascade [5.5% AA] at 15 minutes
0.5 oz (14 g) Pacific Gem or Pacific Jade [15% AA] at steep/whirlpool
1 oz (28 g) Pacific Gem or Pacific Jade [15% AA] at dry hop 1 (9 days)
1 oz (28 g) Cascade [5.5% AA] at dry hop 2 (5 days)
1.2 oz (35 g) gypsum Yeastex/Whirlfloc

YEAST
London Ale III

DIRECTIONS
Mash with the gypsum for 60 minutes at 152ºF (67°C). Vorlauf and sparge. Pitch the yeast at 70–80°F (21–27°C) and ferment at 68°F (20°C).
