Hi, new member here, I have just started brewing. I have a woodfordes wherry that I bottled last week after 2 weeks in the fv, I have just put on a batch of coopers Canadian blonde which is currently bubbling away in the bucket at 19 degrees in the garage.

The woodfordes bottoms still haven't firmed up yet so I gave them a shake today and put them back in the box. I drew a sample of the Canadian blonde off the tap today to check it sg, it's down to 1.010 already so another week in the fv and I'll bottle that up too
 
No, it's only been in there for just over a week. I figured it would take a couple of weeks but thought I'd stir the sediment up to help it (I'll not do this again then). I'm giving them till they've been in 2 weeks then I'm gonna crack one open (the first and last bottle had small yeast blobs go into them when I bottled so I have earmarked these two for carbonation level testers). Once they're carbonated I plan on putting them on the shelf in the garage to keep maturing till Christmas time (drinking the occasional one for quality purposes obviously hahahaha)
 
I gave the bottles a squeeze and they're nice and firm, so I decided to open the first bottle i took from the fv (this have some small lumps floating when I did this so have it marked as a tester/throwaway). It has a bit of fizz, not loads but enough, was still a bit cloudy (from where I stupidly shook them up last week) and still had that homebrew taste about it (but it's only been 3 weeks since I started the brew). All in all I'm pleased with how it's progressing. The plan is to leave it in the warm box till Wednesday, at which point I will be bottling my Canadian blonde, then move it onto a shelf in the garage to clear up for a few weeks.

I'll probably crack open my second tester next weekend once it's had a couple of days resting in the cold. I'll update you all which it then.
 
Well the woodfordes wherry is now out of the hot box and now in the garage conditioning at about 13 degrees, the temperature should drop this week so it'll average just below 10 degrees. The Canadian blonde is now bottled and in the hot box at 20 degrees for th next 2 weeks to carbonate. How long should the beer take to condition once carbonated to get to a good flavour, I'm planning on 2 weeks? Any input?

The wherry is already crystal clear
 
I think cracked my kits open after 1 month. 2 weeks carbonating, 2 weeks in the fridge/cellar. Most kits are better after a little maturation.
 
That's what I was thinking. I'm hoping the blonde will be ready in time for Christmas, but at 3 1/2 weeks it's going to be tight and I don't think it'll be enough to carbonate and condition fully (I'll just have to drink it myself and let everyone else have wherry or store bought, such a shame haha hahaha). I also have a lager on which has been bubbling away since Monday, that'll form part of my summer stash though.

I have had the woodfordes wherry in the cold for a week or so now, I cracked one open today just to check on it. Oddly it was a lot less fuzzy, and more cloudy that the previous one I tried (which was a bit warmer).

I have put these back in a warm room where they'll sit for another week as I assume they are not carbonated enough for cool drinking, is this the right thing to do?
