Far too many of my brew posts now - so time to consolidate them all in to one thread!

AG#1 - Best Bitter

Boil Time: 30 min
Batch Size: 16 liters
Boil Size: 19 liters


FERMENTABLES:
3 kg - Maris Otter Pale (93%)
0.2 kg - Crystal 60L (4.7%)
0.1 kg - Crystal 140L (2.3%)

HOPS:
20 g - Challenger, 30 min,
10 g - East Kent Goldings, 5 min,
10 g - Fuggles, 0 min,

Ended up with OG of 1.058 so diluted with 2l to bring it down to 1.048 and ABV of 4.8%

bloody marvelous pint. Maybe a little sweet in the after taste - but a really good first effort.

AG number 2

On a roll IPA


Boil Size (with a bit of bag squeezing): 22 litres
Boil Time: 60 min
Batch Size: 18 litres (kettle volume)

Original Gravity: 1.043
Final Gravity: 1.007
ABV: 4.66%
IBU: 60.57

Grain:
3 kg - United Kingdom - Maris Otter Pale
0.4 kg - United Kingdom - Cara Malt
0.1 kg - United Kingdom - Extra Dark Crystal 120L

HOPS:
10 g - Admiral, Boil for 60 min,
10 g - Cascade, Boil for 60 min,
15 g - Admiral, Boil for 15 min,
15 g - Cascade, Boil for 15 min,
25 g - Citra, Aroma for 0 min

Very very bitter – IBUs and colour too dark. Came good - ie wont kill you - after 4 weeks. though but wouldnt brew it like this again, next time would drop the 15 min hops and just add them all as a dry hop

AG number 3

NotGoblin clone

3kg hook head irish malt
0.1kg caramalt
0.1kg crystal 120ebc
0.1kg red crystal 340ebc
0.1kg chocolate malt 1000ebc
Mashed at 65c for 60mins

2l dunk sparge at 80c

Leaving 20l boil volume and 15l in FV
20g fuggles at 60min
15k EKG at 30min
10g fuggles and 10g EKG at flame out
No chill to 80c and removed hops

OG1.047

FG1.012

Very dark ruby beer, strong chocolate malty taste. Really good! Almost like a porter, but not quite

AG number 4

Bitter thingymebob

4kg hook head irish malt
100gm crystal 340
100gm caramalt
20gm black patent

20l mash at 65c for 60mins
Squeeze like hell and sparge with 2l water at 80c
Another squeeze and I got 19l for the boil

15gm challenger at 60min
15gm fuggles at 15min
15gm EKG at 15min
20gm fuggles at 0min
60min boil and ended up with 16l in the kettle and 14l in the fv.

OG of 1.063 and used 4l water to dilute to 1.050 and finished with 5%. Yeast S-04


Disgusting TCP flavour – must have mashed it at too high a temp. Sitting for 3 months to see if it comes good. still tastes like **** and washed it down the sink

Just another Bitter

3kg Irish malt
100gm crystal 110
100gm crystal 240
100gm caramalt

20l mash at 65c for an hour and my usual dunk sparge in 2l water and a good bag squeeze
Leaving 18l wort for a 60 minutes boil

Hops
20gm challenger at 60min
30gm fuggles at 15min
20gm EKG at 0mins

15l in to the fv with an og of 1.049 adjusted for temperature - FG of 1.010 and 4.9% abv – yeast S-04
INCREDIBLE pint. super super super!!!!
Very much like a traditional hand pull semi flat bitter, good colour and a really nice creamy mouth feel. Slight hint of nuttiness at the end and fairly well balanced hop profile.

Foxbats mainline bitter

3kg Irish malt
50gm chocolate malt 1000ebc
100gm crystal 340ebc

20l mash at 65c for an hour and a good bag squeeze
Leaving 18l wort for a 45 minute boil

Hops
20gm challenger at 45min
15gm fuggles at 0min
10gm challenger at 0mins

15l in to the fv with an og of 1.049 adjusted for temperature. Yeast S-04

FG 1.012 4.5%

Beautiful dark ruby ale with hints of nuttiness and malty caramel. Really smooth drink

AG number 7

Low bitterness IPA


3kg Irish malt
50gm crystal malt 110ebc
100gm caramalt

16l mash at 65c for an hour followed by a 4l sparge and a good bag squeeze
Leaving 19l wort for a 60 minute boil

Hops
15gm admiral at 60min
25gm Cascade at 5min
50gm citra will go in as a dry hop on day 5

15l in FV at 1.050 after dilution – yeast US Pale ale

FG 1.010 5.2%abv

BLOODY MARVELOUS STUFF

didnt have it long enough to take a picture.....
 
AG number 8

Lager thingy

3kg Irish malt
100gm caramalt

16l mash at 65c for an hour followed by a 4l sparge and a good bag squeeze
Leaving 19l wort for a 60 minute boil

Hops
30gm Saaz at 60min
50gm Saaz at 0 mins
20gm Saaz dry hop

15l in FV at 1.050

Used Mangrover Jack M84 bohemian lager yeast

2 weeks in the cellar @11C – 1 week diacetyl rest at 18C with dry hop, then bottled and left for a few weeks

Final OG – 1.011 giving 5%

Nice peppery brew, clean and crisp and the Saaz really shines through

OG 1.046 – FG 1.008 – 5% abv


Didnt like it to start with, hop profile just didnt gel. But after 4 weeks its come good and is a lovely sessionable bitter

AG number 10

English Stout

1kg Irish malt
100gm black patent
200gm rolled oats

10l mash at 65c for an hour followed by a good bag squeeze
Leaving 9l wort for a 60 minute boil

Hops
10 g Admiral 60 min
10 g Admiral 0 min

4 litres in 2x demijohns with OG of 1.055
lovely stuff, really smooth and creamy.

AG number 11

Another IPA


4kg Irish malt
100gm crystal malt 240ebc
100gm rolled oats

17l mash at 65c for an hour followed by a 6l dunk sparge and a good bag squeeze
Leaving 21l wort for a 60 minute boil

Hops
20gm admiral at 60min
30gm Cascade at 5min
40gm citra will go in as a dry hop on day 5

CML pale ale yeast
ended up having to dilute to 19l to get an OG of 1.050.

Should be about 40IBUs and SRM of 8 with a pleasant citrus hop aroma.

Had over a week to carb up and had a sneaky taste... Home brew twang / TCP type flavours.
Really really annoyed.
35 bottles of slop.

I'll give it 4 weeks and try another, then ditch it if its still rank.

AG number 12

this time a user up-per of everything i have left.

2kg Irish malt
100gm crystal malt 240ebc

15l mash at 67c for 90 mins with no insulation on the boiler. after 90 it was down to 60C - my theory being its like a gradual step mash! Who knows... But as usual followed by a good bag squeeze
Leaving 14l wort for a 45 minute boil

Hops
25gm Cascade at 45min
30gm Cascade when the wort reached 80C and left for 3 hours

Wilkos Notty ale yeast

12l in to the fv at 1.040 - still brewing so we'll see how this turns out.

This one looks good Nick, I was going to do another brew of Foxbats 'Outback' ale but might try this one instead, what do you think you would change hop wise?
 
i'd replace the admiral with something like EKG. However i did have another one last night and now its been bottled for 4 weeks, it really has started to come alive.
 
Thanks for sharing your recipes, I find myself going up and up with the hops in my IPA’s though, I’m at least 200g per brew now.
I may have a problem..........
 
Great, think I have some EKG kicking about but would have to buy the Admiral so that suits!
If you haven't knowingly had Admiral hops before then see if you can pick up a bottle of Hook Norton Flagship IPA. It's a cracking full bodied English IPA that really shows off the flavour of those hops. It's a good way to tell if you're going to like them or not. They really are distinctive.

I have had that before but i'd have to try it again to reacquaint myself!

This ones now finished up and has a FG of 1.010 giving a nice 4% ipa. Sort of old speckled hen in colour due to the crystal addition, but still pretty pale as per the style. Smells and tastes very distinctive, with a slightly spicy/citrus floral note. But i'm putting that down to the relatively large amounts of cascade hops for such a small batch. although 5gm per litre isnt massive, its a powerful hop so should be a good easy drinking pale ale.
Last couple of brews i;ve been a bit tight with the sugar for carbing up and been a little disappointed, so up'd the sugar in this to a teaspoon per 500ml instead of my usual heaped 1/2 teaspoon. (use those little measuring spoons my wife has for baking). Interested to see how this one turns out.
 
AG number 13

Oat Stout
My order from the HBS has turned up, so time to get the black stuff on!

3kg Irish malt
100gm crystal malt 240ebc
100gm crystal malt 340ebc
200gm Oats
200gm Chocolate malt 900ebc
200gm carafa special 2 1100ebc

18l mash at 67c for 60 mins. Followed by a 4l sparge at 80C. As usual followed by a good bag squeeze
Leaving 20l wort for a 60 minute boil

Hops
15gm Target at 60min
20gm Fuggles at 10mins

16l of lovely smelling black goodness in the fv and currently cooling, so no idea on the OG yet - But i'm shooting for 1.050 and 30IBUs with 35SRM

Wilkos Notty ale yeast harvested from AG#12 to go in tomorrow.
