Crash cooling or cold crashing at the end of the fermentation to drop the yeast is not essential just a nice to have. At 15-18*c your pantry is not really going to achieve all that much but you still have nothing to lose by moving your FV in there. After adding hops I would leave it 2 - 3 days in the warm and then the optional cold period
I can't say I have ever come across the instruction to stir the FV as you add your hops. Personally I wouldn't bother. If you do, however, make sure you do not entrain any air into your beer, and in my view a gentle stir is all that is needed.
 
Bottled it up today, the bottom of my FV was thick with sediment it tastes amazing it started at 1066 and ended at 1008 I dont know what that makes the % of the beer but it seems good lol I've got it bottled up gonna leave it for 2 weeks at 20° before i put it in the fridge Tha is everyone for the advice wish i could send you all a bottle lol

Do not take your temps up an down like a yo-yo.

Yeast like a stable temperature,Honest they do.
 
I've now brought a belt so I can keep my next brew at 20° throughout... I have just made my second brew it's the one that came with my kit...

For carbonation, as long as it's within the temperature limits of the yeast it should be fine, about 20*C is ideal. Then after 10-14 days move it to the coldest place you have for a couple of weeks to condition, although longer may be required for it to come good depending on what you have brewed, and only you will know when that is. But if you don't have a cold place don't lose any sleep over it.
 
Thanks for the advice, I have got a kitchen cupboard out side in my garden is that cold enough or is it to cold.?.
