Does anybody have a template for an operational plan? I have nearly everything Environmental Health is asking us apart from this plan for a nano brewery. I am just stuck Just wondering how accurate/professional it should be? Cheers

Here's a useful site ...

In view of the fact that Environmental Health are asking the questions I would look very closely at your plans for:
  • Methods to be used to ensure that the finished product is wholesome and no contamination (including cross-contamination) can take place.
  • Storage of everything from grain to finished products.
  • Brewing and sanitising methods to be used.
  • Disposing of used grains.
  • Disposal of trub.
  • Disposal of waste water and sanitising liquids.
  • etc etc etc
Finally, you will need a Safety Management System to ensure that no-one is injured during production and no-one is poisoned by drinking the finished product.

The "Snail in the Bottle" happened many, many years ago but the principle is part of UK Law so I suggest that you read the following ...

Finally, without the above you will be unable to get any Liability Insurance just in case someone sues you!

Enjoy!
