I have seen the Ruhbarb gin. I'm thinking of using it in a beer. (I know it's been done before)
 
I've never used n beer but I would suggest you do not boil. For gin I cut it into 25cm lengths and cover in sugar and leave overnight. Then add gin to that. You could do the same and add to FV after 2 days. Not sure what weight per litre you would need though.
