I just finished cold-crashing a 9 litre experimental extract brew in a mini bucket for 8 days following successful fermentation. 5 litres were kegged and pressurised, the rest went into CO2 purged bottles with a couple of carbonation drops.

Then it occurred to me: doesn't cold-crashing cause the yeast (et al) to drop out? What's going to digest my carbonation drops? Guess I'll find out in a couple of weeks, but if anyone wants to have a stab at guessing the outcome ...

No worries- there will always be some yeast left, it might take a few days longer to carbonate but it will carbonate. I cold crashed a lager to super clear and it still carbonated nicely in a couple of weeks. I did have to leave a higher OG beer about 3 weeks to carbonate after a similar set of circumstances and stressed about it here - but following the advice here to have patience, it did eventually carbonate nicely.
