Ooh, sherry. A tricky balancing act.
Only ever tried this once and wasn't too bad but took a couple of years to yield something drinkable.
Look forward to seeing what you get up to.
What do you plan to fortify with or shall we wait and see ;)

It's always a long termer! Should be done for Christmas - I leave the raisins whole in the FV, and just let it rumble on as the sugars come out of them. Plan is to let it ferment out, clear then bottle to just below shoulder and top up with brandy.....I'll post updates as they happen.

1.5 Gallons water
Yeast
Yeast Nutrient
2 Gallon FV

Additional 2kgs sugar added to FV a week ago.
Last night strained out of the FV and into DJs for the long slow burn to Christmas.....tasted very good last night from the bottom of the bucket!
