The golden and pale ales are a bit heavy on the crystal malt for my taste. I rarely go over 10% total crystal, but others do.

Not sure about the flaked barley in the golden ale. Maybe. Will reduce clarity though.

The Golden Ale will most likely be the first on, I am also not sure about the flaked barley or how I came to have it in the recipe (no doubt alcohol was involved), I will definitely keep in mind "Clibits I rarely goes over 10% crystal total", I have already ordered the ingredients I will most likely go with what I have although I probably have a few weeks thinking time.

Either way I will give a review after its brewed good bad of indifferent.

I would maybe halve the Crystal 113 in the golden and halve the Crystal 30 in the pale.

They are both pale crystals assuming they are EBC so shouldn't be too dark.

OK guys advice taken, I will look at making some alterations later, the ABV's where exactly where I wanted them so will have to collect a kilo of Maris to make up the short falls. Because I buy crushed grain and knowing that has a limited shelf life I always try to use everything up by the last brew.

OK spent quite a while re-jigging things to use what I have and keep the brew within the ABV's is was aiming for, the below will be brewed to 21 ltrs and has been calculated at 75% efficiency

Golden Ale 4.0% ABV 34.9 IBU 10.1L
Maris Otter 3.0 kg 77%
Crystal - 113 250 g 6%
Biscuit Malt 165 g 4%
Flaked Barley 150 g 4%
Crystal - 30 150 g 4%
Flaked Maize 150 g 4%
Black Malt 15 g 0%
15g Warrior 15.5 AA% 45 mins boil
35g First Gold 6.0 AA% 10 mins boil

Oatmeal Stout 4.6% ABV 37 IBU 47.4L
Maris Otter 3kg 66%
Flaked Oats (Porridge) 400g 9%
Crystal - 113 250g 6%
Black Malt 225g 5%
Roasted Barley 175g 4%
Biscuit Malt 165g 4%
Flaked Barley 150 g 3%
Chocolate Malt 150g 3%
20g Warrior 15.5 AA% 45 mins boil
20g Brambling Cross 6.0 AA% 10 mins boil

Pale Ale 5.1% ABV 57.4 IBU 7.8L
Maris Otter 4kg 82%
Crystal - 30 400g 8%
Flaked Maize 200 g 4%
Biscuit Malt 165g 3%
Crystal - 113 100g 2%
30g Warrior 15.5 AA% 40 mins boil
30g Cascade 6.0 AA% 15 mins boil
30g Cascade 6.0 AA% 5 mins boil
30g Cascade 6.0 AA% 7 day

The Oatmeal Stout is on, I made it yesterday and reused the Safale 05 from previous brews.
It came out at 1047 giving me 80% efficiency, it took quite a while to start off even though when I have made yeast starters previously have had the brew noticeably fermenting the following morning.

I increased the Warrior to 25gr & the Brambling Cross to 25gr.

Right this looks to have finished at 1.018 giving me 3.81%, does this seem right for a oatmeal stout?

I have had a little taste and it not overly sweet, I did mash at 67 degrees if that would make it finish this high.

It's not far out, probably right. You will have had some unfermentable sugars with al those grain types. Check the hydro again tomorrow? Or has it been 1018 for 3 days or so?

I'd also be a bit careful with the flaked barley ref haze issues...I only use it in porters... but at 4% you might be OK. Flaked maize is OK though...I like it in pale beers but rarely see people use it. I think it does add an extra subtle flavour component.

Its been 1018 for 4 or 5 days, was a bit worried I had a stuck fermentation Brewtarget gave me a finished gravity of 1012 but did think there may have been a good quantity of un fermentable sugars.

oops..I posted only after getting to bottom of page one. Assume the golden ale is already done??

Yes the Golden Ale is already done, am just enjoying the first few pints its clear enough but has some flavours/tastes that just don't agree with my palette I am thinking probably from the Flaked Maize, I am thinking next time I will not use the Flaked Maize or Flaked Barley.

Unless you just want them all a bit dryer I would leave out all the flaked maize and replace with more maris otter. Also the stout has a huge amount of non malted grain which could lower efficiency.

Sorry posted without reading second page, good to see efficiency was good.

I got a Grain Mill for Xmas and plan on buying 25kg of base malt, I know most people tend to use Maris Otter, my questions is this, what the a reason why Maris Otter is more expensive is it just because more recipes use it, and could I just substitute it for a Pale Ale Malt and what impact would that have on the final brew?

Irish Craft Pale Ale Malt (Whole) 25kg 4-6 EBC (Minch) €27.00
Chateau Pale Ale 25kg Whole EBC 3.2-4.3 €34.00
Best Pale Malt 25kg WHOLE (BESTMALZ) 6 EBC €22.40
Maris Otter - Whole grain 25kg (Crisp) €40.00
Maris Otter - Whole grain 25kg (Muntons) €48.00
