How about something like a Hopback Summer Lightning?

I have made a hybrid of Summer Lightning and Citra: Citra Lightning (Grease soundtrack.)

The recipe I tweaked was from Graham Wheeler's Brew Your Own British Ale but I just added lots of citra in at flameout and some in the FV. Still fermenting away after 3 weeks and currently stands at 5.6%

How about a wheat beer? I use plenty of honey with a little bit of honey malt and it's quite good (tastes very much like Blue Moon's honey wheat).
