With all this hot weather you'll probably be wanting some nice smooth and sweet sorbet to take the edge off (if a cold beer hasn't done so already!).

If you've never made it before it's incredibly easy. I made both raspberry and a lemon sorbet last night in half hour whilst cleaning the kitchen

You will need:
250ml water
200ml of your chosen fruit juice (4 lemons works great, or a punet of raspberries)
Rind of 1 lemon
200g of sugar
1 small container with matching lid (takeaway box)

To make:
Put your water, sugar and lemon rind in a small pan and bring to the boil. Ensure the sugar is dissolved then turn off the heat. Remove the rind and add the fruit juice. Let it cool and pour it into the container.

Place the container flat in the freezer and shake vigorously every 1-2 hours. Depending on how cold your freezer is you won't have long to wait. If you leave it too long and it freezes hard before you can shake it a few times open the lid and use a fork to break down the ice crystals.

Enjoy!

This sounds nice Nick. I’ll have to give it a go.

Cheers.
