Cider can work quite well in a number of recipes, work great with pork and a few years back I cooked a couple of pheasants in the slow cooker in cider, was really tasty.
 
Works well with ham too. When you boil it, use 2/3 cider 1/3 water instead of just water.
Makes good stock for Pea and Ham soup.
