I would keep my eye on those pet bottles, 1018 is a little on the high side, my guess is that it'll continue to ferment so you are going to have to relieve the pressure now and again.
As for the sulphiting and potassium sorbate additions :thumb:
I always add extra apple juice when I keg, as you say it gives back a little sweetness and apple flavour :cheers:

how often would you relieve the pressure???

thanks, think i will add a litre of apple juice to the cornie, will that lower the ABV?
 
No pet bottles don't explode :D
They swell up like balloons and split :twisted:
Give the bottles a tap or a squeeze daily, if they ring like bells or are too hard to compress just unscrew the cap and let some pressure out :)
Adding 1 litre of AJ to 20 litres of TC| will lower the abv by 4% I think :wha:
But it'll add loads of flavour :party:
 
it'll get fermented if you're using it as priming sugar so should go back up to somewhere pretty close.
 
i have thrown in campden tablets and PS and it will be kept in the garage, so i can't see it ever fermenting again.

so the cornie will take 18 litres of TC at 9% and a litre of apple juice which should take it down to 8.5% abv.

Apple flavour would be great, don't want any sweetness though :nono:
