Depends what you want to do on the bike and what you want from it. I.e. tourer, racer etc.

Went out on my bike yesterday. Lovely to get out. I live in the country and our local waste refuse sit is closed, must have passed a dozen garden fires. I burnt a load last week too

Endurance type bike, I have my mountain bike set up with some Schwalbe slicks. Had a big accident in November and just getting back mobile. I’m wanting to move more into road cycling and not too much motorcycling
 
I used to have a full home gym set up. I sold it in February after joining a gym in October and as a result stopped using my home set up.

Regret it slightly now.
 
Set of Kettlebells, they are so versatile , youc an do full body cardio get ripped and incredibly strong all in one.. ALso do nto take up laosd of space.. exercise bike and a pull up bar and parralettes for calithesnics. THat being said I think fresh air and natural vit D is very important. I do not like this suggestion that we could be prisoners in our own homes.
 
I went out on my bike the other day after around a year and a half lay off due to having some back issues. After my hip check up recently I got the all clear to resume some exercise.
I only done a few miles with the Mrs and kids but it felt so good.
I have to lose some weight as per doctor's orders...the last couple of weeks I've gone from 102.2 kg to 98.5...

I’ve been drinking like a fish lately so will be trying to trim down the next few weeks. Just wish I could drink beer, do bugger all, and not put on weight!
 
Work pays for a gym membership..I used to go a few times a week but had a lay off from that too...I used to have a go with a kettle bell just to increase a bit if resistance on some exercises...can't resume that for obvious reasons...
 
I've done 70 miles in 4 rides on my bike this week - not loads, but given I usually only do 4 miles at a time on a commute it feels like a lot. I've got a flat bar road bike, and it's proving really comfortable on longer rides. The lack of traffic has made it really enjoyable, and I'm seeing all the villages around where I live that I've never been to before
 
I dunno what my bike is...it's a "Boardman",hybrid,got it from Halfords after speaking to the man about my hip and stuff ..he did quite a few adjustments to it while I was there and made it right for me. It's light, comfortable and is quite fast....for me anyway!
 
I've got a Giant Rapid 2 - don't think they make them any more. Retailed for about £800 new but I got mine for £450 as it was old stock, the previous year's model. Nicest bike I've had by far, now I understand why people pay top dollar for a decent model.

Buying a bike for £2-3k can be a minefield. So much choice but lot comes down to personal preference. If you have a mountain bike I take it you have some knowledge and may already have some preference to makes etc.

Don't be tempted to any online sellers, although you can grab some amazing deals on 2nd hand. Trying a load of bikes would be first choice, take them out for a spin, get a feel for them and see what you like. Buying local may cost a little more but most shops match online prices. Some of my local bikes shops have closed due to covid.

For £2k at a minimum you want full carbon, a decent wheelset and full ultergra gears and brakes. Whilst I mention brakes you maybe used to disc on a mountain bike and these are popular now on road, again down to preference. I have one of each.

For £3k as above but with carbonwheels and possibly dura ace gears and brakes.

Popular brands are more expensive but the main thing is try before you buy.

My current road bike is a British build. Orro are the make. Got one of their limited edition hand made and hand painted. Love it but not that expensive compared to trek etc. Also ride cyclocross and that's a giant, totally different ride but both really comfortable
 
I've got an ancient specialised FSR from 2003.
Love it, easy to rebuild fox air shock out back and the superb fox talas fork up front.
All adjustable height and rebound and just refuses to die. Very old tech by modern standards, but it just works and you can pick them up for about £200 in decent condition.

Unfortunately my daughter now steals it at every opportunity and I end up on her mongoose hard tail with 29's - but as we mostly do gravel tracks together, I don't mind as the 29" wheels make so much difference on rolling resistance over the 26" on the fsr

For what most of us regular humans can do, it's a waste. And if you want to smash your way round some red routes time to time...a £200 shitter disposable specialised is way less stressful to be on! Oh no, I fell off and dropped my bike down a rocky outcrop, never mind. Do that with a £2000 bike and you cry at all the scrapes and chunks taken out of the frame.
See it all the time at Sherwood pines and kielder forest.

For 2K+ and given the OP's endurance requirements, I'd want steel, not carbon. Possibly Titanium. And certainly not carbon wheels. I'd also be heavily skewed towards a 1x hydraulic groupset rather than Dura ace?

I guess that's where personal preference comes in.
