I use a v2 Brew Devil and i am keen to get a better understanding of my actual Mash temperature - rather than the temperature of the wort as it flows over the temperature sensor in the bottom of the boiler. I use a k type thermocouple with a stainless probe for checking boiling temps etc. Initially i was looking for a waterproof food grade k type, but understand k type probes are +/_ 1c. The NTC 10k probes as used on the STC1000 are much more accurate, but can only find plastic coated ones which i am sure are not food rated. I am sure i am not the first person to go down this route!
 
A thermocouple will just be in the way for stiring the mash and cleaning, why not just get a cooking thermometer?
