HOPS:
10 g - Magnum, 60 min,
10 g - Moteka , 10 min,
40 g - Moteka, 20 whirlpool at 80c

Mangrove Jacks M29 French Saison

Ended up with OG of 1.042 expected ABV of 5%

All went well, forgot to drop in the protofloc but will chill down to drop out as much as I can before kegging and use a floating dip tube.

I brewed similar to this during lockdown using Comet and Eureka.

Will be kegging, will put tasting notes and pics in when done.
 
Kit Cider #1

I usually just throw 16 1.5l cartons of Lidl Apple juice in with a Mangrove Jacks M02 Cider yeast. Comes out dry and fruity, very well compacted yeast cake and crystal clear.

Trying a MJ Mixed Berries kit with their cider enhancer kit.

Will keg 12l of it and bottle the rest.
 
Mountain IPA

It's the one the Craft Beer Channel did in conjunction with Wild Card Brewery. A mix between a NEIPA and a West Coast IPA.

No dramas, hit the numbers bang on. 1.044 in the fermenter.

Simpsons Finest Pale Ale Golden Promise®™ (400 grams)
Simpsons Finest Pale Maris Otter (3600 grams)
Simpsons Dextrin Malt (200 grams)
Simpsons Wheat Malt (200 grams)
TMM Jumbo Oat Flakes 26 (400 grams)

Hops

Magnum Pellets (10 grams)
10g 60 min

Centennial Pellets (100 grams)
20g for 10 boil, 30g for whirlpool, 50g dry hop 2 days

Chinook Pellets (100 grams)
20g for 10 boil, 30g for whirlpool, 50g dry hop 2 days

Strata T90 Hop Pellet (100 grams)
30g for whirlpool, 70g dry hop 2 days

Yeast

LALBREW® VERDANT IPA Dried Yeast 11g (1 packs)

Will be begging this in about 10 days hopefully.
 
Saison taste test.

Very very funky vibes from this one. Clean tasting with a fruity bitterness, light mouthfeel.

Needs to be a cooler, I just tried at at 10c, will be dropping to 7c.

Mountain IPA taste test.

Not cared up properly yet but still a very drinkable pint.

Huge citrus/tropical fruit aroma. Not as bitter as I was expecting but very well balanced.

Needs to carb up a bit before I give it another go. A real sunshine beer, this one won't last long!

Last weekend I did a double brew day.

The Elusive Spellbinder from Malt Miller - Coffee Porter

Simpsons Finest Pale Ale Golden Promise®™ (4000 grams)
Crisp Brown Malt (700 grams)
Simpsons Malts Crystal Light (280 grams)
Crisp Naked Malted Oats (140 grams)
Crisp Dark Crystal Malt (280 grams)
Crisp Chocolate Malt (140 grams)
Magnum Pellets (15 grams) - 60 mins
Mangrove Jacks M42 Strong Ale 11.5g (2 packs)

I already had most of the ingredients, only needed the GP and Brown. I used M42 instead of S04.
No issues with brew, hit 1.060 into the fermenter, it's down to 1.022 at the moment, I've just transferred in a cold brew coffee made from 150g of Lavazza smooth roast.

I'm fermenting in a corner keg for the first time, temp has been perfect in the house staying steady around 18c. Used a blow off into starsan - had a fair amount of blowoff - probably overfilled the keg. Will be cold crashing then kegging by next weekend.

Other brew was a user upper, based on the All Together IPA from lockdown times. I previously had brewed two batches of the West Coast style but with closed transfer etc now possible using corny kegs I've tried the NEIPA version.

Brew went spot on, getting 1.050 into the keg.

Maris Otter Pale - 3kg
Flaked Oats - 1kg
Carapils - 250g
Comet - 5g 30 mins
Mosaic - 50g 80c whirlpool for 20 mins
Comet - 20g 80c whirlpool for 20 mins
Mosaic - 100g dry hop for 3/4 days
El Dorado - 50g dry hop for 3/4 days
Wai-iti - 50g dry hop for 3/4 days
Endevour - 20g dry hop for 3/4 days
Lallemand New England yeast - 1 pack

Fermenting this one in a corny keg with a Kegland spending valve - for the first 3 days I kept the pressure at 2psi, dry hopping I've increased this up to 15psi. Will cold crash in a day or two.

Have got two clean and sanitised kegs ready to transfer into, looking forward to both of these.
