Racked a brew today so fv is empty, i have minch pale, carrared, crystal 40, special w, caraaroma, hops bramling x, fuggles, ekg, challenger, target, and cascade, also some black malt, all suggestions welcome
 
Something like this would make a tasty dubbel:

20L batch
1.064 OG
1.010 FG
7.0% abv

4.5kg pale malt
200g carared
200g crystal 40
200g special w
500g muscovado sugar

23 IBU of challenger at 60 mins

WLP530 or BE-256 yeast
 
Hi Sam thinking about it when i was a lad i used to love Chesters dark mild, as i said to steve a dubbel sounds good but may be a step to far for me at this stage off my brewing ability athumb..

I had a bottle of old peculier last night. I might try something a long them lines. I have seen a few recipes online.

A single-hop Bramling Cross dark mild is a beer to behold: one of my local breweries makes one and I've attempted to replicate it, comes out pretty good.

Aim for an OG around 1042, dark colour 60+ EBC, bittering around 22IBU with some decent Bramling Cross late additions, I used 15g at 10min and a 20g hop steep. For the grain bill I used 83% pale malt, 8% crystal, 3% roasted barley, 3% chocolate malt, 3% black malt, but just use what you have.
