Wine for Christmas?

...I have a few fruit wines bulk aging for Christmas, but any suggestions for something I can get on now, for drinking in 87 days time

All the work's done for you - just chuck in a bucket, add the yeast, wait a few days. Then add all the other chemicals - stabiliser, finings etc.
Ready in as little as a week or so.
As with most things, you get what you pay for...
