If I were to make a quality red wine kit how long would it have to be stored before it was at its best?
What storage conditions are really needed? I don't have a wine cellar or any cellar at all :(
If rather wait a bit longer than drink "raw"...

I used to store mine for of 3 - 6 months. Some were great after years, some started to go down hill quickly after 2.

@aamcle I would say around 12 months.

With my cellar 7 wine kit I tasted it every 3 months and it tasted amazing at 12 months.

The top dollar ones with skins etc need a lot longer - min of 3 months. No max, really. As for storage - the coolest, darkest place you can muster......(how's that for a statement of the bleedin' obvious)

I've never been lucky enough to have a home with a cellar, if I tried to dig one (Yerr right) I'd end up with a cold dark swimming pool. The water table here must be about 6" down. .....
