Whats your tried and tested yorkie recipe?

Mine is:

3 eggs
plain flour (to the same volume as the eggs)
milk (to the same volume as the eggs)

Whisk & leave it to stand for a couple of hours

Heat the pudding tin with oil

Add the mixture to the hot oil 3/4 of the way up

Oven at 200c for about 20 mins

hi, i usually use 2 eggs, but also add in salt and pepper, as well as a teaspoon of mustard as well, english of course!!
Tey raise with little hole in middle.....just right for pouring gravy into, also, don't forget to use lard in the bottom of the tins and also to preheat that little bit of fat before pouring in the mixture!!
