I am thinking ahead slightly but when I bottle my first brews nearer Christmas I am planning on going all out and getting the shrink wrap foil tops and decent labels to make them look presentable.

My Beaverdale Merlot kit seems to be taking forever to degass. Been shaking the DJ at regular intervals all day yesterday and today and it still looks just as full of CO2 as when I started.

From what I understand. Head space, or air above your wine is fine during fermentation as the CO2 produced will fill the space and protect the wine. If the wine is not fermenting and so not producing CO2, prolonged exposure to the air can oxydise your wine.

The instructions in the Beaverdale Melrot I have say that primary fermentation will take 15-20 days. I will probably take a hydro reading in a week to see how its getting on.

I, like most other, can't get white grape juice anywhere but no trouble with the red. Have seen it in my local Morrisons, Asda, and Tesco.

The Beaverdale kit had its own yeast so I used that. Not sure what type, it was just labelled "red wine yeast".
