If your wine is too sweet do not bin it just bottle it up and keep for the occasions when you brew a super dry wine, in the past I have had super dry tc's and have mixed some of my sweeter efforts in with it to make quite a quaffable Drink.
My motto is if it contains alcohol never ever throw it...

I have re used screw tops loads of times but have also successfully corked dozens of screw tops and have never had so much as a crack in a bottle. I did come across some bottles where the necks were just too narrow to cork but these stood out a mile.
if you are struggling for demis then just go to a large supermarket and buy a load of 5 litre bottled water use the water for brewing or drinking :wha: and then drill the lid to take an airlock et voila a cheap demijohn

Note to seasoned kit brewers always give the destructions a quick squint. I got the youngs harvest yorkshire bitter and surprisingly when you read them it tells you to use 1.5kg of sugar whereas the normal bitter is only 1kg. Nearly caught me out that time lol

There are plenty of good mead recipes on here just use the search but make sure you have plenty of DJs as it takes quite a long time to ferment and even longer to reach a drinkable state.
