I brew lagers mostly so could use a few sacks of lager malt and I can pick up
the Munich malt to finish off that sack. (not done one for a while).

It does have a rotary switch which when turned raises or lowers a set of contacts allowing more or less current to the element.

The Lincat spare parts page for this unit does not mention a cutout at all!

I have a Lincat Lynx 2kw. boiling ring which should allow the use of a boiling pot without resorting to a kettle or immersion element in the
wort.
It does however need the thermal cut out removing. I am quite happy

I am not an engineer so some of your reply is over my head. So, in straight forward language, what would I need to build a similar unit to the Morebeer conical which is temp. controlled?

The extra sugar will not affect your Boddys.
Actually it`s not a bad stab at Boddys bitter, pre InBev of course.If anything there`s a bit too much crystal in it. 85gms. is plenty.
