    That's on my to do list, made an IPA with the Vermont Ale yeast which smelled absolutely fantastic. Tinkered with the dry hopping on that, think I dumped them all in just near the end of fermentation. However I made it way too bitter which ruined the whole thing.

    As you mention, not recommended to make a starter with dried yeast - it uses up the reserves/nutrients built into the yeast when manufactured. Your best bet would be to use an online calculator to work out your required pitching rate then go from there. I would probably rehydrate at least 2...

    Personally I'd go for all 10 minute or less additions. With that level of alpha you'll still get decent bitterness and maximum flavour. Have a read on a method called 'hopbursting'.

    Session IPA Brewday

    Saw on Cloudwater's Twitter feed that to get the best out of Vermont yeast they ferment at 16°C until 1.020 then ramp it up to 21°C for a diacetyl rest. Hope that helps. Also got a session IPA planned with this yeast and that's the schedule I'll be following.

    They'll get there, eventually. The yeast will be quite worn out after fermenting that beast. A lot of people add a bit of neutral yeast when bottling such big beers to help out. Just leave them in a dark place at room temperature and they'll get there. Plus they'll taste even better the longer...

    Left Handed Giant, Bristol

    I had a pint of their IPA in one of my favourite bars in Birmingham a few months back. One of the best beers I've ever had. So fresh and juicy and moreish, but also fairly deadly - think it came in at 7.4%. Looking forward to trying more of their stuff.
