    At 1.012 and about 80% attenuation you'll be fine. The couple of extra points won't make a world of difference. 3 days into fermentation is quite early to add your dry hop.

    1.014 will be fine for the style. I usually mash my shouts a bit higher with the intention of them finishing up around that number.

    I've used both systems albeit the Robo more extensively. For me the only two things that the GF is better is the controller and the chiller. Build quality wise they are suspiciously similar. For me it came down to the fact that for the two things I mentioned I couldn't justify the jump in price...

    That's spot on I feel, on the scale that we brew as homebrewers make beer I would challenge anyone to be able to duplicate a recipe but with one purposely miss gravity by 2-5 points a d be able to notice a difference in the end product. Regarding the robobrew I couldn't recommend it highly...

    Further to the dishwasher rack, go to your local pub/restaurant and ask if they have any spare racks. Coincidently my one holds 40 bottles which is usually how many beers I end up bottling.

    Christmas beer

    Just got done brewing this, added the maple syrup at flameout as suggested. Smelt great. My quickest brew day to date. 9am start and all done and cleaned up by half 12.

    You won't get much honey flavour if any. Have you considered racking the beer onto it in secondary? I would boil it with a touch of water to be on the safe side.

    Citra and Nelson Sauvin IPA - hop advice?

    I love nelson but for my money with the prices of those 2 hops I wouldn't want to put them together. For good examples of both try the Oakham citra and from thornbridge the killing to best show of each of the hops.

    What sort of numbers financially are you looking at for a setup of that size? Also associated building works to bring the space into a state that it's fit for purpose to include possible planning requirements.
