    AG #whatever: Berliner Weisse

After making a Maibock a few weeks back that had loads of malt in the tun this week's beer was the opposite. 2kg Pilsner Malt 1kg Wheat Malt 10g Hallertauer H. @ 15 minutes Mash started at 64C but due to the small size of the mash I had trouble maintaining temperature, over the 75 minute mash...

    Clearing an insanely hopped beer

Due to insanity and having a load of Goldings hops I've made an all late hopped English IPA. 200g of Goldings all added in the last 20 minutes of the boil, plus another 45g dry hopped, in a 20l batch. It's turned out as a reasonably good tasting beer but refuses to clear. It's had gelatine...

    2011/12 Insane beer - Lambic

So after the success of last years Flemish Redish brew this years target for a beer to sit in the shed for a year is a Lambic. The basic recipe was 3kg Pilsner Malt 2kg Unmalted Wheat 25g heat aged Mt Hood Hops. Firstly the heat ageing, the hops sat in an 80C oven for about 90 minutes until...

    Annual insane brew - Lambic

After a pretty successful Flemish Red(ish) as last years silly beer it's getting round to the time for another 'special' brew. This years target is a straight lambic. 2kg unmalted wheat 3kg pilsner malt Some heat 'aged' hops, probably Mt Hood as I've got some left over. These will be stuck...

More strange things with strange ber

It's been nearly a year since I brewed my partial mash flemish red(ish) brew and it's been sitting in the shed gently doing it's thing ever since. Today I bottled most of it but decided to go a bit more insane with some of it. I've put ~4l into a demijohn with 700g of frozen raspberries and...

AG x: Prunus Theobroma Chocolate Cherry Stout

The recipe for this brew is a pretty simple one, until the last minute of the boil. It starts as a fairly chocolate malt heavy stout. 3kg Pale Malt 500g Crystal 500g chocolate 100g torrified wheat 50g black malt Mixed by brewing assistant no.1 Mashed at 67C which I hit exactly, with...

    AG n+1: Calapooya American Amber

I've lost track of my count of AG brews already, must be somewhere around 10 I think... Anyway, as a change from my regular hop testing APAs I though an american amber would be nice, so a Willamette based amber was Sundays brew. 4.00 kg Pale Malt, Maris Otter 0.60 kg Crystal Malt 0.30 kg...

I've got a couple of days off between leaving my previous employer and starting a new job so it's time to make beer..... Apparently it's the law that all saisons have to have some season related pun in the name..... The plan. 4kg Pilsener malt 1kg Munich malt 300g Acid malt 60g wheat malt...
